Summer is my most favorite season because it’s all about ease. 

I don’t know about you but my cooking and eating habits are very different during the summer months (in the best way). I love things that can be eaten as is or thrown together quickly and easily, that require no recipe or heat to make. I also tend to eat lighter, colder foods (even though my digestion hates me for it).

On a personal note, we’re gearing up to (finally) move in about a week. This move has consumed nearly every part of my life for the last few months, and subsequently I’ve been very mediocre at sharing content lately. 

To make up for it, I thought it would be fun to share some pics of everything I’ve been eating lately that fits neatly into this category of easy, light, healthy no-cook plant-based meals. Because despite being so-so at sharing content or personal details about my life, I am fantastic at taking pictures of what I’m eating or cooking for others.

Anyways, for each picture I’ve also included a short caption describing what the meal is, along with when, how or why I’m eating it to give you some context in case that’s helpful.

Sunrise Melon. I love to start every day with a piece of fruit, or bowl of a few different kinds of fruit in the Summer when produce is especially abundant. If I’m feeling fancy I’ll add a squeeze of lime and pinch of pink salt, which gives it a little flavor boost.
Greens and fruit smoothie. My go-to lately is simple but so flavorful: frozen mango, banana, kale, lime, coconut water. This one’s from Berry Bowl in Highland Park, but usually I blend my own at home.
Vegetable wraps. Siete chickpea flour wrap, herby cream cheese from Kitchen Mouse in Highland Park (the absolute best), crunchy veg and capers. I had two of these for lunch when we were running low on food, which is usually when I’m most creative! Good to remember.
